The World Famous Susan Witkin Spinach Kugel Recipe

Susan Witkin Spinach Noodle Kugel:

 

1 -16 ounce package wide egg noodles (boiled and drained)

2 -10 ounce packages frozen chopped spinach (defrosted and drained-squeeze water well)

1 stick melted butter (margarine for kosher purposes)

1 pint half-n-half (coffee rich for kosher purposes)

2 envelopes (1 package) dry onion soup mix (I use Lipton)

6 eggs (beaten)

 

Mix all the ingredients together in a large bowl.

 

Pour into ‘pammed’ 9 x 13 inch baking dish

 

Bake 350-degree oven for 60 minutes.  The top noodles should be crunchy-brown but not burnt.
