Susan Witkin's Carrot Cake Recipe!

Susan Witkin's Winning Carrot Cake Recipe!

2 cups flour

2 tsp. baking powder

1 1/2 tsp. baking soda

1 tsp. salt

2 tsp. cinnamon (or a combo of cinnamon, clove, ginger)

2 cups sugar

1 1/2 cups oil (or a combo of oil and applesauce)

4 eggs

2 cups grated raw carrot

1 (8.5 oz) can crushed pineapple, drained(I usually use bigger cans)

Cream Cheese Frosting

Sift together flour, baking powder, soda, salt and cinnamon. Add sugar, oil and eggs and mix well Stir in carrots and drained pineapple. Turn into 3 greased and floured 9-inch layer cake pans. Bake 350 degrees oven 35 to 40min. until the top springs back when toothpicks come out clean. Cool a few minutes in pans and then turn out onto wire racks until cool. Then frost.

Cream Cheese Frosting

1/2 cup butter

1 (8 oz.) package cream cheese softened

1 tsp. vanilla

1 lb. confectioners sugar.

Combine sugar and cream cheese and vanilla and beat until well blended...add small amounts of milk to thin for spreading.
